Hello everyone, myself Neelima Anil. Ela Ada or Elayappam a Kerala Snack Recipe is a south indian sweet which is loved by everyone. I you haven’t tried it yet do give it a try by making it yourself using this recipe.

South Indian Dessert recipe is undersood for its unique flavour and the way how the dishes are prepared. Most of those sweets use natively produced and grown ingredients which eventually adds up to the flavour and taste of the dish. One such traditional recipe is that the elayappam or ela ada recipe wrapped and steamed within a banana leaf.

INGREDIENTS (Ela Ada or Elayappam a Kerala Snack Recipe)

For Stuffing

  • 1 tsp ghee / clarified butter
  • ¾ cup jaggery / gud
  • 1 cup coconut, grated
  • ¼ tsp cardamom powder

For Dough

  • 1 cup rice flour, fine
  • 1½ cup water
  • 1 tsp ghee / clarified butter
  • ½ tsp salt

DIRECTIONS (Ela Ada or Elayappam a Kerala Snack Recipe)

STUFFING PREPARATION

Ela Ada or Elayappam a Kerala Snack Recipe

  • Firstly, into a pan start heating 1 tsp ghee, ¾ cup jaggery and 1 cup coconut.
  • Saute them together for 5 minutes or until jaggery melts completely.
  • The stuffing need to be aromatic and should be of a sticky consistency.
  • Now add ¼ tsp cardamom powder and mix well.

DOUGH PREPARATION

  • Roast 1 cup rice flour on low flame for about 5 minutes.
  • Transfer it to the bowl and let it cool completely.
  • Into a saucepan combine 1½ cup water, 1 tsp ghee and ½ tsp salt.
  • Bring it to boil and let it boil for 2 minutes.
  • Pour the hot water over flour and mix using a spoon.
  • Once the water is absorbed and the dough has cooled slightly start kneading it with your hand.
  • Knead it to a smooth non-sticky dough by greasing little ghee to hand.

ASSEMBLING AND STEAMING

  • Firstly, warm the banana leaves so that it will be easy to fold.
  • Grease all the leaves with ghee. you can alternatively use baking paper.
  • Take a ball sized dough and flatten over a banana leaf.
  • Place a tbsp of prepared stuffing and spread uniformly.
  • Fold the leaf into half and seal all the sides by pressing gently.
  • Place it in a steamer and steam for about 15 minutes or until it is cooked completely.
  • Finally, elayappam / ela ada is ready for Serving.
